Ingredients
- 2 tbsps oil
- 1 tin of kidney beans (in water)
- 1 onion, peeled and finely chopped
- 2 cloves of garlic, finely chopped
- 3 carrots grated
- 1 tsp ground cumin
- 1 handful of fresh coriander
- 1 heaped tsp plain flour
- 750g potatoes
- 3 spring onions, thinly sliced
- 2 tbsps mayonnaise

- Saucepan, chopping board, sharp knife, peeler, grater, frying pan, fork

- Gluten (flour), egg (mayonnaise)
Method
- Peel the potatoes, cut into 2cm pieces and simmer for 15 mins
- Meanwhile drain the beans, rinse and put in a pan with cold water. Bring to the boil and simmer for 10 minutes to soften
- While the beans and potatoes are cooking, chop the onion and garlic up as finely as possible
- Grate the carrots
- Heat 1 tbsp of oil in the frying pan and gently fry the onion, garlic and half the grated carrot for 4-5 minutes.
- Stir in the cumin and fresh coriander for a further minute
- Drain the beans and add them to the onion and carrot mix. Remove from the heat.
- Stir in the tsp of flour
- Mash the bean and vegetable mixture together with a fork (until it is like mashed potato)
- Season with salt and pepper
- Drain the potatoes and leave to cool
- Divide the burger mixture into 5 balls
- Heat 1 tbsp of oil in the frying pan on a medium heat
- Place the balls into the pan and flatten gently with a fork to make the burger shape.
- Cook for 3-4 minutes on one side, then turn and cook for a further 2-3 minutes
- While the burgers are cooking, finely slice the spring onions
- Mix the mayonnaise and spring onions into the potatoes and season with salt and pepper to make your potato salad
- Enjoy your burger with salad or vegetables
