Ingredients
- 2 tbsp oil (olive or other)
- 600g chicken thighs, skinless and boneless
- 2 garlic cloves, finely chopped
- 600g potatoes, peeled and cut into 1cm cubes
- 100g spinach, washed
- 200g frozen peas
- 1 lemon for zest and juice
- 2 tbsp honey
- Salt and pepper

- Chopping board, sharp knife, small bowl, spatula or wooden spoon, grater, roasting tin

Method
- Heat the oven to 200C / 180C fan / Gas mark 6.
- Peel and dice the potatoes into 1cm cubes
- Peel and finely chop the garlic cloves
- Prepare the lemon zest using a grater
- Mix the oil, honey, mustard (optional), garlic, lemon zest and juice in a small bowl
- Place the chicken into a roasting tin, then pour over the marinade.
- Turn the ingredients over to make sure they are all coated with the marinade
- Arrange them to make sure the chicken is not covered by the potato
- Roast in the oven for 30-35 minutes until cooked through
- Remove the tray from the oven, add the frozen peas and spinach, coating them in the cooking juices.
- Return them to the oven for 4-5 minutes, until the spinach wilts
- Remove from the oven and serve
- Pour the juice over each portion.
