Ingredients
- 1 tbsp olive oil
- 2 cloves of garlic, finely chopped or crushed
- 1 onion, finely chopped
- 1 courgette, halved lengthwise and sliced
- 2 small or 1 large pepper, sliced into small pieces
- 1 small can of sweetcorn (or 200g frozen sweetcorn)
- 1 broccoli, cut into bitesize pieces
- 150g frozen peas (optional)
- 2 x 400g tins of chopped tomatoes
- 250g or half a bag of small pasta like penne, fusilli etc.
- 2 tbsp tomato puree
- 1 tbsp Italian or mixed herbs
- 2 tsp or 1 cube veggie stock powder dissolved in 375ml water
- 1 tsp garlic powder
- 1/2 tsp chilli powder
- 100g cheddar cheese, grated
- Salt & pepper

- Chopping board, sharp knife, large pan with a lid, wooden spoon, measuring jug, grater

Method
- Prepare the vegetables as indicated and put the kettle on for the stock
- Heat the oil over a medium heat before adding the onion and garlic. Cook for 4-5 minutes.
- Turn the heat up to medium / high and add the courgette and peppers.
- Cook for 2 minutes Then stir in the corn, tomatoes, stock, herbs, chilli, garlic powder and tomato puree.
- When the sauce starts to bubble, lower the heat to medium and stir in the pasta.
- Add the broccoli, pushing it into the sauce so it is covered.
- Put the lid on the pan and cook for 5 minutes. Then, remove the lid and cook for a further 5-6 minutes until the pasta is almost cooked through, stirring frequently.
- Add half the cheese and the peas (if you have some). Season with salt and pepper.
- Sprinkle over the remaining cheese, put the lid back on for the last minute so that it melts.
- Serve ono a place and celebrate that there is not much washing up!

Top Tip
Experiment with any vegetables you have in this tasty one pot dish. Just remember to chop everything into smallish, similar sized pieces!
