Method

  1. Sieve the flour into a large bowl.
  2. Make a well in the centre of the flour and break the eggs into it.
  3. Start to whisk in the eggs, mixing in bits of flour from around the edge of the bowl.
  4. Gradually mix in small quantities of the milk, don’t worry about the lumps as they will disappear as you whisk the milk in. Whisk until smooth.
  5. Melt some butter or add oil to thinly coat the bottom of the pan. Once the pan is really hot, turn down slightly before adding around a ladle of the batter mix.
  6. If the batter is too thick, add a little more milk so that your next pancake is crispier.
  7. As soon as the batter hits the pan, tip it around from side to side to get the base of the pan evenly coated.
  8. Cook for 30 seconds or until golden underneath – lift the edge to check.
  9. Flip over with a spatula or toss the pancake if you are feeling brave! Heat for a further 20 seconds, then slide the pancake onto a plate.
  10. Cover to keep warm while you make the rest. Add more butter or oil to the pan if needed.
  11. Once ready, add toppings.
  12. Try grated apple and a sprinkle of sugar or sliced banana and chocolate.

Top Tip

If you have any left over mixture, cover and store in the fridge for the next day.
