Ingredients
- 2 tablespoons oil
- 400g paneer, cut into 2cm cubes
- 2 garlic cloves, finely chopped
- 1 onion, roughly chopped
- 500g potatoes, cut into 1cm cubes
- 200g plum or cherry tomatoes, halved
- 200g frozen peas
- Thumb of ginger, peeled and finely grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 100ml water
- 1 lime (for juice)
- Salt and Pepper to season

Method
- Preheat the oven to 180°C fan / 200°C / Gas mark 6
- Peel and chop the vegetables as indicated
- Cut the paneer into 2cm cubes and set aside.
- Place the potatoes, tomatoes, onions and paneer into a large baking tray.
- Add the garlic, ginger, spices and salt and pepper together with the oil.
- Mix well until everything is coated with the spices and arranged on one layer in the tray.
- Transfer to the oven and roast for 35-40 minutes, until the paneer is evenly browned and potatoes are cooked.
- Remove from the oven, add in the water and the frozen peas and return to the oven for another 5-7 minutes.
- Remove, squeeze over the lime juice and season with salt and vinegar to taste.
- Serve onto plates
