Ingredients
- Vegetable or Olive Oil
- 500g of sweet potato
- 1 red pepper
- 1 green pepper
- 1 onion
- 1 tsp of mixed herbs
- 100g sweetcorn
- 6 large eggs
- 50ml milk
- 150g cheddar cheese, grated
- salt and pepper

- Chopping board, knife, frying pan, mixing bowl or jug, fork, spatula, plate

Method
- Peel and chop the sweet potato into small cubes.
- Peel and dice the onion into small pieces.
- De-seed and chop the peppers into small pieces.
- Grate the cheese.
- Heat 2 tbsp of oil in a large non stick frying pan.
- Gently fry the onions and sweet potato for 5 minutes over a medium heat.
- Add the peppers and fry for a further 4 minutes, stirring regularly.
- Add the sweetcorn and sprinkle with mixed herbs.
- Season with salt and pepper.
- Crack the eggs into a bowl / jug, add the milk and beat until well mixed. Stir in most of the cheese.
- Pour the mixture over the vegetables in the pan, and add the remaining cheese on top.
- Whilst the frittata cooks, use a spatula to carefully loosen the sides and base to prevent sticking.
- Turn your grill to a medium heat.
- Once the frittata is cooked and only the surface is still runny, loosen for a final time before placing under the grill.
- Be careful not to put the handle under the grill!
- Remove the frittata from the grill after 2-3 minutes.
- Loosen the edges and serve straight from the pan, or carefully slide onto a plate using a spatula.
- Leave the frittata to cool for 2-3 minutes.
- Cut into wedges to serve.
- Enjoy!
Top Tip
You can add any combination of ingredients to a frittata, its great for using up leftover vegetables!
If you prefer, you can transfer the veg into a baking tin in the earlier step. Add the egg mixture and cook at 200°C/180°C fan for 20 minutes.
