Method

  1. Preheat the oven to: GM 7 / 220C / 200C fan
  2. Put the flour and salt into a bowl
  3. Cut up the butter or margarine into small pieces
  4. Rub the flour and butter together with your fingertips until the mixture looks like breadcrumbs
  5. Add the milk, a bit at a time to make a soft but not sticky dough
  6. If you are adding any fruit or cheese, add it in now and knead in in the next step
  7. Scatter some flour on your surface, knead the dough a little to pull it together into a ball
  8. Flatten the dough with your hands until it is about 5cm thick
  9. Cut the dough into rounds with a scone cutter or small glass or cup, dipping into flour between cuts so it doesn’t stick to the dough
  10. Place the scones on a floured baking tray
  11. Bake in the oven for 12-14 minutes until lightly golden and firm to the touch.
  12. Enjoy!

Tips

For sweet scones add fried fruit e.g. currants or raisins with a teaspoon of sugar and some cinnamon or mixed spice. Or slice your cooked scone through the middle and add jam.

For savoury scones, add 50g grated cheese, a pinch of pepper, some cooled fried onions and some herbs like parsely or chives.
