Method

  1. Heat the oven to 220C, 200C fan, Gas Mark 7
  2. Peel and chop the onion and garlic, and slice the peppers thinly.
  3. Try frying the onions in oil on the hob for 5 minutes before adding the peppers for another 5 minutes.
  4. Place the vegetables in the high sided oven tray or dish.
  5. Drizzle over 1 tbsp oil, add salt and pepper and toss it all together.
  6. Tear the bread into bite sized pieces and place on baking tray.
  7. Drizzle with 1 tbsp oil, add salt and pepper and toss to coat well.
  8. Try microwaving the same bread in oil for one minute, repeating 3 or 4 times until dry.
  9. Put both trays in the oven for 10-12 minutes until the bread is crisp and brown and the vegetables have softened.
  10. Remove trays from the oven and put bread to one side.
  11. Sprinkle the cumin and paprika over the vegetables.
  12. Stir in the baked beans and 3/4 of the tin of tomatoes.
  13. Stir well and return to the oven for 15-20 minutes until thickened.
  14. Try mixing in the vegetables on the stove. Cover with a baking tray to steam the eggs.
  15. Remove the tray from the oven, and give the sauce a stir.
  16. Use a spoon to create 5 holes in the sauce and crack an egg into each one – (or mix in, if you prefer).
  17. Put the tray back in the oven for 5-10 minutes until the eggs have just set.
  18. Remove from the oven, add Salt and Pepper.
  19. Scatter the crunchy bread on top. Serve onto plates.
  20. Enjoy!
