Ingredients
- 1 tbsp of oil
- 2 x 185g cans of tuna
- 1 onion, finely chopped
- 2 cloves of garlic, crushed
- 1 x 400g chopped tomatoes
- 200ml water
- 1 tsp Italian seasoning
- 350g pasta, penne, fusilli or similar
- 300g broccoli chopped into small florets
- 1 small can of sweetcorn, drained
- 200g pack of light soft cheese
- 60g cheddar, finely grated
- Salt and Pepper

- 2 Large saucepans, knife, chopping board, wooden spoon, ovenproof dish, grater

Method
- Chop the onion, crush the garlic.
- Chop the broccoli into small florets and drain the tuna.
- Heat the oil in a large pan, add the onion and fry gently for 5 minutes, add the garlic and then fry for a further 2 minutes.
- Boil the kettle for the pasta.
- Add the chopped tomatoes plus 200ml water and simmer gently for 10-12 minutes.
- Meanwhile, add the pasta and boiling water to a large pan and simmer for 12-15 minutes.
- Add the broccoli to the pasta for the last 5 minutes (making sure there is enough water in the pan) then drain.
- Heat the grill to medium / high.
- Stir the soft cheese into the tomato sauce until melted, then stir in the herbs.
- Add the pasta and broccoli to the sauce.
- Stir in the drained tuna and sweetcorn. Mix well and season with the salt and pepper.
- Tip into an ovenproof dish and sprinkle on the cheddar.
- Place under the grill, not too close to the heat, and cook for 4-6 minutes until golden and bubbling.
- Remove from the grill and serve.
