To cook on the hob, chop the peppers into small pieces and fry, then serve as tuna and veg rice after a future step.

Method

  1. Preheat the oven to 180C / 170C fan / Gas Mark 5
  2. Bring some water to the boil in a saucepan and add the rice to cook for 15 minutes or until tender. Drain when cooked.
  3. Place the prepared peppers on a lightly oiled baking tray.
  4. Brush with a little oil and bake for 10-12 minutes to soften.
  5. Meanwhile, chop the onion, garlic, tomatoes and courgette into small pieces.
  6. Add 1 tbsp oil to the pan and fry the onion, garlic and courgette gently for 5-6 minutes to soften.
  7. Stir in the paprika and herbs and fry for 1 more minute.
  8. Remove the peppers from the oven.
  9. Drain the cooked rice.
  10. Add the fresh tomatoes, tuna, sweetcorn and tinned tomatoes to the frying pan and stir in on a low heat.
  11. Add the drained rice, season with salt and pepper and mix well.
  12. Ensure everything is well mixed, then fill the pepper halves with as much of the rice mixture as you can.
  13. Add the rest of the mixture to the baking tray around the peppers.
  14. Sprinkle grated cheese over the peppers and put in the oven to cook.
  15. Remove from the oven after 15 minutes or when the peppers are softened and the cheese is melted and golden.
  16. Serve onto a plate.
  17. Enjoy!
