Cajun Beef and Bean Burgers

Method

  1. Peel and cut the potatoes into 2cm pieces. Simmer in a pan of water for 15 mins.
  2. Meanwhile place the bread in a large bowl and add the milk to soak the bread, squeezing it a little to make sure it is all soft
  3. Chop the onion and garlic up as finely as possible
  4. Grate the carrots
  5. Head 1.5 tbsp of oil in the frying pan and fry the onion and garlic for 3 minutes
  6. Add half the grated carrot and fry for 2 minutes
  7. Stir in the cajun spice and fry for 1 more minute
  8. Put the veggie mixture aside to cool.
  9. Rinse the beans in cold water and mash with a fork
  10. Drain the potatoes and leave to cool
  11. Add the beef mince, mashed beans, veggie mixture, mustard, salt & pepper to the large bowl with the bread
  12. Mix together well with a fork
  13. Preheat the grill to a high heat
  14. Divide the burger mixture into 5 balls, then flatten slightly into patties 1.5cm thick
  15. Brush both sides of the burgers with oil & season with a little more salt & pepper.
  16. Grill the burgers on a rack with a tray underneath for 4 minutes each side
  17. OR, fry on a medium head in pan, turning once, until golden brown
  18. While the burgers cook, finely slice the spring onions
  19. Mix the mayonnaise and spring onions into the potatoes and season with salt & pepper to make your potato salad.
  20. Enjoy your burger with salad or vegetables
