Carrot and Bean Burgers

Method

  1. Peel the potatoes, cut into 2cm pieces and simmer for 15 mins
  2. Meanwhile drain the beans, rinse and put in a pan with cold water. Bring to the boil and simmer for 10 minutes to soften
  3. While the beans and potatoes are cooking, chop the onion and garlic up as finely as possible
  4. Grate the carrots
  5. Heat 1 tbsp of oil in the frying pan and gently fry the onion, garlic and half the grated carrot for 4-5 minutes.
  6. Stir in the cumin and fresh coriander for a further minute
  7. Drain the beans and add them to the onion and carrot mix. Remove from the heat.
  8. Stir in the tsp of flour
  9. Mash the bean and vegetable mixture together with a fork (until it is like mashed potato)
  10. Season with salt and pepper
  11. Drain the potatoes and leave to cool
  12. Divide the burger mixture into 5 balls
  13. Heat 1 tbsp of oil in the frying pan on a medium heat
  14. Place the balls into the pan and flatten gently with a fork to make the burger shape.
  15. Cook for 3-4 minutes on one side, then turn and cook for a further 2-3 minutes
  16. While the burgers are cooking, finely slice the spring onions
  17. Mix the mayonnaise and spring onions into the potatoes and season with salt and pepper to make your potato salad
  18. Enjoy your burger with salad or vegetables
