Method

  1. Prepare the apple as instructed
  2. Cut the butter into small cubes then slowly melt into the milk and sugar in a small saucepan
  3. Turn off the heat and add the dried fruit. Leave to soak.
  4. Pour the flour, apple and spices into a large bowl.
  5. Add the salt and yeast to opposite sides of the bowl
  6. Give everything a stir
  7. Gently beat the eggs and add to the flour (keeping some back for the glazing at the end)
  8. Add the warm (not hot) milk and fruit then bring everything together with your hands or a spoon. You want to make a soft, wet dough.
  9. Dust some flour onto your worktop and knead your dough for 10 minutes. For the best technique, watch the video below.
  10. If the dough is very wet, add an extra teaspoon of flour and carry on mixing. Roll into a ball and put back into the large bowl.
  11. Cover the bowl with clingfilm or a damp tea towel and leave in a warm place for 2-3 hours.
  12. When the dough is doubled in size, knock it back to let out some of the larger bubbles and cut into 12 roughly equal pieces.
  13. Roll each piece into a ball and place 3cm apart on a floured baking tray or in a roasting tin.
  14. Cover with clingfilm or a dry tea towel, ready to double in size again. This might take over an hour.
  15. Turn the oven on to GM7, 425F, 200 Fan
  16. When ready, glaze each bun using the leftover egg mixture to add a shiny top after baking
  17. In a small bowl mix the plain flour with the cold water (a few tablespoons at a time) until you have a smooth paste.
  18. Spoon the paste into a small plastic bag, make a tiny snip across the corner and use the bag to pipe crosses across your buns
  19. Bake in the oven for 15-20 minutes until golden brown
  20. Let them cool for a bit then serve with a bit of butter or jam.
