Ingredients
- 2 - 3 tablespoons oil
- 400g beef mince
- 2 red or brown onions, finely chopped
- 4 cloves garlic, crushed / finely chopped
- 1 x 400g can of chopped / plum tomatoes
- 1 egg, lightly beaten
- 2 slices of bread for 50g fresh breadcrumbs
- 1 tsp ground cumin
- 1 tsp ground coriander
- 15g fresh mint, finely chopped
- 30g fresh coriander, finely chopped
- 2 tsp sugar
- Salt and pepper to season
- 300g dry couscous and 300ml of water, boiled and left to cool for a bit

- Chopping board, knife, grater, 2 frying pans or similar, 1 saucepan, wooden spoon, mixing bowl, 2 large bowls

Method
- Peel and chop the vegetables & herbs as indicated
- Boil the kettle for the couscous water.
- Heat a tbsp of oil in a pan and add the onions, garlic, coriander and cumin.
- Fry for a few minutes until soft. Separate into two equal portions in the pan.
- Put half of the mixture into a mixing bowl to cool for the meatballs.
- Add the tomatoes and sugar to the remaining mixture in the pan.
- Simmer for about 15 minutes until reduced.
- As the sauce simmers, make the breadcrumbs using a grater and whisk the egg in a bowl.
- Put the dry couscous in a separate bowl and add the hot water. Cover and leave to absorb for 10-15 minutes.
- For the meatballs, add the breadcrumbs, beef mince, fresh herbs and egg into the bowl with the onions.
- Season, mix everything together well and shape into walnut-sized balls.
- Heat the remaining oil in another pan. Add the meatballs and fry for about 10 minutes until golden.
- Once firm and golden, add the meatballs to the tomato sauce and simmer gently for 5 minutes until cooked through.
- Uncover the couscous and use a fork to separate the grains.
- Serve the meatballs and sauce over a bed of couscous, with a green veg.
