Method

  1. Peel and chop the vegetables & herbs as indicated
  2. Boil the kettle for the couscous water.
  3. Heat a tbsp of oil in a pan and add the onions, garlic, coriander and cumin.
  4. Fry for a few minutes until soft. Separate into two equal portions in the pan.
  5. Put half of the mixture into a mixing bowl to cool for the meatballs.
  6. Add the tomatoes and sugar to the remaining mixture in the pan.
  7. Simmer for about 15 minutes until reduced.
  8. As the sauce simmers, make the breadcrumbs using a grater and whisk the egg in a bowl.
  9. Put the dry couscous in a separate bowl and add the hot water. Cover and leave to absorb for 10-15 minutes.
  10. For the meatballs, add the breadcrumbs, beef mince, fresh herbs and egg into the bowl with the onions.
  11. Season, mix everything together well and shape into walnut-sized balls.
  12. Heat the remaining oil in another pan. Add the meatballs and fry for about 10 minutes until golden.
  13. Once firm and golden, add the meatballs to the tomato sauce and simmer gently for 5 minutes until cooked through.
  14. Uncover the couscous and use a fork to separate the grains.
  15. Serve the meatballs and sauce over a bed of couscous, with a green veg.
  16. Enjoy!
