Ingredients
- 350g self raising flour
- 1/2 teaspoon salt
- 85g butter or margarine
- 10-12 tbsps (160-175mls) milk

- Small bowl, mixing bowl, wooden spoon, measuring spoon or tablespoon, scone cutter or small glass, baking tray

- Wheat, gluten, dairy
Method
- Preheat the oven to: GM 7 / 220C / 200C fan
- Put the flour and salt into a bowl
- Cut up the butter or margarine into small pieces
- Rub the flour and butter together with your fingertips until the mixture looks like breadcrumbs
- Add the milk, a bit at a time to make a soft but not sticky dough
- If you are adding any fruit or cheese, add it in now and knead in in the next step
- Scatter some flour on your surface, knead the dough a little to pull it together into a ball
- Flatten the dough with your hands until it is about 5cm thick
- Cut the dough into rounds with a scone cutter or small glass or cup, dipping into flour between cuts so it doesn’t stick to the dough
- Place the scones on a floured baking tray
- Bake in the oven for 12-14 minutes until lightly golden and firm to the touch.

Tips
For sweet scones add fried fruit e.g. currants or raisins with a teaspoon of sugar and some cinnamon or mixed spice. Or slice your cooked scone through the middle and add jam.
For savoury scones, add 50g grated cheese, a pinch of pepper, some cooled fried onions and some herbs like parsely or chives.
