Spicy Mexican Quorn Nachos

Method

  1. Chop the veg as indicated.
  2. Make sure the sweet potato is cut into 1cm cubes.
  3. Heat the oil in a frying pan on a high heat, add the onions and fry for 3 minutes.
  4. Now add the quorn mince and Mexican seasoning mix.
  5. Break up the mince, mix together wel and fry on a medium heat for 4-5 minutes until it is cooked through.
  6. Now add the pepper, sweet potato, chopped tomatoes and kidney beans to the quorn mince, with a pinch of salt and pepper.
  7. Mix well and cook together for 5 minutes.
  8. Next, dissolve the stock cube into 200ml of boiled water in a mixing jug.
  9. Add the stock to the mixture.
  10. Cover the mixture with a lid or some foil and lower the heat.
  11. Simmer for 10 minutes or until the sweet potatoes have softened.
  12. Whilst the mixture cooks, grate the cheddar, ready for serving.
  13. Evenly cover the base of your bowls with tortilla chips.
  14. Divide the mixture evenly between the bowls.
  15. Top each portion with the grated cheddar
  16. Crush some tortilla chips over the top.
  17. Enjoy!

Top Tip

Why not add some yoghurt or sour cream and any herbs or spices of your choice!
